1 Welcome Baskets and Laura Bush Cowboy Cookies

One of my favorite parts in planning our wedding was the welcome baskets! Some incredibly talented ladies created a basket that was more than I could even dream about! The baskets had a Texas theme and were tied with "The Yellow Rose of Texas." I made a coloring book that I included in the groomsmen's welcome baskets for their kids! (I'll post the coloring book later!) It was so much fun to think about all of these details and I was thrilled with the results!



I admire Laura Bush so much and think that she is SUCH a southern lady so OF COURSE we had to include her "Cowboy Cookies" and the recipe! The picture above is a little fuzzy so here is the recipe!
3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups soft butter
1 1/2 cups granulated sugar
1 1/2 cups light-brown sugar
3 eggs
1 tablespoon vanilla
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans (8 ounces)
Mix flour, (baking powder), soda, cinnamon, and salt. (set aside) Beat butter smooth - 1 minute. Gradually add sugars. Beat 2 minutes. Add eggs one at a time, beat in vanilla. Stir in flour mixture. Add chocolate chips, oats, coconut, pecans. Drop 2 tablespoons (on a cookie sheet). Bake 17-20 minutes at 350 degrees!

  1. the basket WAS amazing...and I let Justin have a BITE of the cookies...but kept the rest to myself! hey - I am pregnant, right?!?! I have already made the recipe thanks to you including it! :) love them!
