1 Mexican Rainbow Salad

 In the spirit of Cinco de Mayo, here is a lovely salad that is easy to individualize for each person at the table! :-)
Mexican Rainbow Salad
Lettuce
Tomatoes
Olives
Ground Beef
Cheese
Avocado
Pinto Beans
Salsa
Place lettuce on a plate and then arrange the rest of the ingredients in rows! :-) Add salsa and enjoy!
You could also add rows of chips, chicken, shrimp, and corn.

4 God's Goodness!

God is constantly reminding me how good and faithful HE is! 
And how perfect HIS timing is!
Skeptics might ask, why do you believe in something that you can't see. . . 
But I can see HIS hand in my life. . . 
I can see HIS hand in the lives of my friends and family. . . 
At those sweet times when there is no other explanation but GOD!
 Isn't it encouraging to know that HE still performs miracles. . . 
that HE, the Creator of the universe, knows how many hairs are on our head. . . 
that HE loves us so much that HE gave his Son so that we can live forever in eternity with Him!
Just as a mother and father delight in their child. . . 
God delights in us!
"For I am convinced that neither death nor life, neither angles nor demons, neither the present nor the future, nor any powers, neither height nor depth, nor anything else in all creation, will be able to separate us from the love of God that is in Christ Jesus our Lord." Romans 8:38-39

0 Quick Chicken Quesadillas

Cinco de Mayo is RIGHT around the corner and we Texans celebrate this holiday with vigor! :-)
I love Mexican food so much that when I lived in Australia for a month my sweet dad sent me chips and salsa! 
Needless to say, "Beef, it's what's for dinner" might be our Texan 'motto' for food. . . but "quiero comida mexicana" would definitely be a close second! :-)
This recipe for chicken quesadillas is SO easy, quick, and DELICIOUS! Perfect for weeknights or when feeding a crowd! :-)

Quick Chicken Quesadillas
6 oz refrigerated cooked Southwest-flavor chicken breast strips
1/2 cup Chunky salsa 
1 package flour tortillas for burritos 
Cooking spray 
2 cups finely shredded Colby-Monterey Jack cheese blend 
1/4 cup sour cream 
Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa. Spray 1 side of 1 tortilla with cooking spray; place sprayed side down in 10-inch nonstick skillet. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.Cook uncovered over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.

2 Vanilla Bean Ice Cream

Well it is getting hot. . . 
and here in Texas we have 20+ degrees to go before getting to our typical 100 degree summers. 
But don't worry, 
I have the perfect summer afternoon treat for you. 
Homemade Vanilla Bean Ice Cream 
This creamy, cold bowl of deliciousness is the most amazing way to cool down on those summer days!  
So with a bowl of ice cream in mind, 
I say bring on the heat! :-) 
Vanilla Bean Ice Cream
2 cups heavy cream, divided
1 cup whole milk
¾ cup sugar
Pinch of salt
1 vanilla bean, split lengthwise
1 tsp. vanilla extract
Combine 1 cup of the cream with the sugar and salt in a medium saucepan.  Scrape the seeds from the vanilla bean into the pan and drop in the vanilla pod.  Heat over medium-high heat, stirring occasionally, until the sugar is dissolved.  Remove the mixture from the heat and stir in the remaining 1 cup of cream, the milk and the vanilla.
Cover and refrigerate until the mixture is well chilled.  Remove the vanilla bean before churning. Freeze in an ice cream maker according to the manufacturer’s instructions.

1 Soy Rubbed Tenderloin

Today was beautiful! :-) 
These past two weeks have been crazy with lots of commitments, seeing friends, and spending time with family. 
But everyday, while I am walking in God's beautiful creation, 
 time seems to stop!
I can't turn around. . .
 no matter how many other things I should be doing. . .
I just have to keep going. . . 
so for that hour. . . 
time stands still!
It is my quiet time with God . . . 
constantly talking to Him throughout my walk. . . 
thinking about my day. . .
and I. LOVE. IT! 

This meal is another one for busy weeks! ;-)

Soy Rubbed Tenderloin
One 4-5 pound beef tenderloin
1/2 cup soy sauce
Freshly ground black pepper
1. Allow the beef to stand at room temperature for 1 hour. Preheat the oven to 425 degrees
2. Place the tenderloin in a 13x9 inch glass baking dish and rub all over with the soy sauce. (I suggest putting foil at the bottom of the pan) Rub the meat all over with a generous amount of black pepper.
3. Roast the tenderloin for 45-50 minutes, depending on the degree of doneness you prefer. Remove from the oven and allow the meat to rest for 15 minutes before you slice it. Serves 10 to 12.

0 Roasted Chicken and Goat Cheese Roll Ups

This is such an easy and wonderful weekday dinner! :-) 
Nate loved these roll ups with Monterrey Jack and I loved the goat cheese! :-)

Roasted Chicken and Goat Cheese Roll Ups
Serves: 6 
1 1/2 tsp olive oil
1 1/2 c vertically sliced red onion
2 c shredded roasted skinless boneless chicken breasts
3/4 c (3 oz) crumbled goat cheese (you can also use queso fresco or Monterrey Jack)
1/2 c canned salsa verde
6 (8 inch) fat-free flour tortillas
Cooking spray
Heat oil in a large nonstick skillet over medium-high heat. Add onion; saute 3 min or until tender. Add chicken; saute 30 sec or until thoroughly heated. Remove from heat; stir in cheese and salsa. Warm tortillas according to package direction. Spoon about 1/2 c chicken mixture down center of each tortilla; roll up.
Wipe pan clean with a paper towel. Heat pan over medium-high heat. Coat pan with cooking spray. Place filled tortillas in pan, seam sides down; cook 4 minutes, turning to brown on all sides.

1 Old Fashioned Buttermilk Pound Cake

Pound cake is one of those recipes that everyone should know how to make. 
The perfect dessert, breakfast or snack, this versatile and easy "cake" can make an appearance at so many times of the day! 
One thing is for sure. . . you probably won't have leftovers! :-)
Old Fashioned Buttermilk Pound Cake
1/2 cup butter or margarine, softened
1/2 cup shortening
2 cups sugar
4 eggs
1/2 teaspoon baking soda
1 cup buttermilk
3 cups all purpose flour
1/8 teaspoon salt
2 teaspoons lemon extract
1 teaspoon almond extract
Cream butter and shortening; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating after each addition. Dissolve soda in buttermilk. Combine flour and salt; add to creamed mixtrue alternately with buttermilk, beginning and ending with flour mixture. Mix until well blended after each addition. Stir in flavorings. Pour batter into a greased and floured 10 inch tube pan. Bake at 350 degrees for 1 hour and 5-10 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan 10-15 minutes, remove from pan and cool.

Bunny Rabbit Cupcakes
White Cupcake Box mix and the ingredients on the box.
White icing 
Pink and White Candy Corn 
Brown Mini M&Ms
Pink Regular Sized M&Ms.
 Make the cupcakes according to the box. Ice cupcakes. Put two candy corn where the ears would go and place two M&Ms where the eyes would go. Then put the nose on!!! :-) (Note: Don't ice or put M&M on cupcakes until the day you are serving them. . . and refrigerate them ! :-)

3 Spring Chick Cupcakes

Good morning! :-)
Don't you just love coconut?? 
I know I do! :-) 
Add some food coloring and coconut revolutionizes a cupcake! :-) 
Simply amazing! :-) 
I love coconut so much so that my favorite donuts are iced with coconut on them. . . 
Nate on the other hand thinks that coconut is awful unless COMPLETELY concealed in a cookie! :-) 
Now that you know the history of our love/hate relationship with coconut. . . :-)

Spring Chick Cupcakes
White Cupcake Box mix and the ingredients on the box.
White icing  
Shredded Coconut
Yellow Food Coloring
Brown Mini M&Ms 
Orange Starburst
 Make the cupcakes according to the box. Ice cupcakes. Put coconut in a bowl and mix yellow food coloring in with a spoon. Put coconut on top of cupcakes and place two M&Ms where the eyes would go. Cut an edge off of the starburst and place it where the nose would go!! :-) (Note: Don't ice or put M&M on cupcakes until the day you are serving them. . . and refrigerate them to keep the Orange Starburst  from bleeding onto the yellow coconut! :-)

1 Easter Basket Cupcakes

God is so good! :-) 
He amazes me daily with his faithfulness and his perfect plan for our lives. 
“I will instruct you and teach you in the way you should go; I will counsel you and watch over you.”Psalm 32:8
I am so encouraged by God's hand over me, the way things have happened in my life that have no other explanation than HIM, and the constant validation that HIS way is perfect! :-) 
I want nothing more than to walk in HIS will! :-)  
This Easter week, I am reflecting over the many blessings God has bestowed on me! :-)
He is good. . . all the time! :-)

Easter isn't just about bunnies, cupcakes, and brightly colored eggs. . .but it is still sweet to celebrate our risen Savior . . . and make cute desserts! :-)

2 "Carrot" Cupcakes

These "Carrot cupcakes" are so cute and work well as regular sized cupcakes or as mini cupcakes! :-) Quick, easy, and so adorable. . .my kind of cupcake! :-)
"Carrot" Cupcakes
White Cupcake Box mix and the ingredients on the box.
White icing 
Green and Orange Mini M&Ms or Regular M&Ms (depending if you are making mini cupcakes or regular ones)
Make the cupcakes according to the box. Ice cupcakes. Place orange M&Ms in the shape of a carrot with two green M&Ms on top! :-) Enjoy! (Note: Don't ice or put M&M on cupcakes until the day you are serving them. . . and refrigerate them to keep the Orange M&M's from bleeding onto the white icing! :-)
