This is a wonderful summer salad with delicious dressing!
Salad:
2 cups cubed seedless watermelon
1 pint cherry or grape tomatoes, halved
1/2 cup seeded and diced cucumber
1/4 cup pine nuts, toasted
1/4 cup crumbled feta cheese
Dressing:
1/4 cup freshly squeezed orange juice
1/2 teaspoon minced garlic
2 tablespoons honey
2 tablespoons snipped fresh chives
2 tablespoons apple cider vinegar
1/2 cup canola oil
2 tablespoons extra virgin olive oil
coarse salt and freshly ground pepper
Whisk together the vinaigrette ingredients in a medium bowl; season with salt and pepper. In a large bowl, combine the watermelon, tomatoes, cucumber and pine nuts. Toss with desired amount of the vinaigrette. Sprinkle with the cheese and serve immediately.
