4 Snickers Ice Cream Pie

I felt HORRIBLE yesterday. . . my sweet kiddos took pity on me and were PERFECT the day before Spring Break (have I said how much I love the kids I teach?) . . . Since I love them, we watched the news coverage about the tsunami in Japan while they did their work. . . (praying for the Japanese people, the nuclear plant, and for healing to the country) . . . after school, I raced to the doctor begging for the "shot". . . no clue what it is called but if you have allergies you know what shot I'm talking about! :-) I came home and literally fell into bed and could not get out, my head was killing me, my eyes were watering because they hurt so badly, and I kept sneezing, (I'm sure I looked H.O.T.) . . . sweet Nate just took such good care of me. His "babying" me makes me love him all the more. . . he ran an errand for me, went to the store (which he HATES to do), got soup for me, and . . . wait for it. . . made a cake! :-) (yes it was a box cake but still I was pretty impressed with the outcome! :-) Not only can he build fences and ride horses, ladies and gentleman,  but he can also bake a cake!

This morning, I still wasn't feeling very good and missed out on a fun filled day. . . but I have watched this over and over today and every time it makes me smile! I found it on Elizabeth's blog and I. AM. OBSESSED!

Since I am still not feeling 100%, I wanted to make something easy. . . something with just two ingredients. . . something that I have had my eye on for a while now. . . a Snickers Ice Cream Pie. . . I found this amazing recipe on my friend, Ashlea's blog, The Little Kitchen That Could. Snickers Ice Cream Pie is just what the doctor ordered. . . right?? or was that an apple??
 Snickers at the bottom. . .
 Dulce de Leche ice cream. . .
On the top. . .
 And a little slice of heaven on a plate!
Snickers Ice Cream Pie
2 pints Dulce de Leche Ice Cream 
14 Snickers Fun size bars, unwrapped and cut into thirds 
Soften ice cream by leaving it out for 30 minute to an hour or microwave each pint for 10 to 20 seconds. Line an 8 x 4 1/2 inch loaf pan with parchment paper.  Let it hang over the edges.
Arrange chopped Snickers in the bottom of the pan.  Press ice cream gently into the pan.  Freeze until firm, about 6 hours. Pull overhang of parchment paper to invert snickers pie onto a plate and slice immediately with a sharp knife.

  2. so yummy! my mom used to make something similar when we were kids. She would take an assortment of candy bars, chopped up, and do the same thing. So good!
