0 Margarita Frittata

I know that house guests and summer go hand in hand so I want to share with you a quick and easy breakfast recipe that will wow "ladies that lunch" and your "steak and potatoes" man!
Margarita Frittata
8 eggs
2 Tbsp non fat milk
1/2 cup fresh mozzarella cheese, shredded
Handful of small cherry tomatoes
Fresh basil, chiffonade (I used dried basil and it was wonderful but fresh is always better!)
Sea Salt and freshly cracked pepper, to taste
Preheat the oven to 350 degrees. Coat the baking dish with cooking spray.
Mix the eggs with the milk until well combined then season with sea salt and freshly cracked pepper, to taste. Pour the egg mixture into the baking dish then place the tomatoes, mozzarella cheese, and basil evenly in the egg mixture.
Place into the oven and bake at 350 degrees for 20 minutes, or until a tester inserted in the center comes out clean. Remove from the oven and cool for 5 minutes before cutting. Enjoy!
