1 Erin's Creamy Pork Tenderloin

On Sunday, we went to the Houston Polo Club for an event to benefit Yellowstone Academy.
Yellowstone's mission statement reads, "Yellowstone Academy exists to promote human flourishing among Houston’s poorest families.  The school exclusively serves children from very low-income families with a program designed to provide them the educational, spiritual, social and practical resources they need to succeed in life. Yellowstone Academy is a faith based, comprehensive approach to addressing the multi-dimensional challenges of poverty in the lives of children from the platform of a high quality private pre-school through eighth grade educational institution.  Through education and intensive intervention, these children can break the cycle of intergenerational poverty and grow up to become responsible, productive adults."
Nate and I absolutely LOVE this ministry and truly believe that education CAN stop the cycle of poverty!

This weekend, it seemed that we were always leaving one place to race to another. . . but that is typical of our spring "season." (Does your family have a "busy season?") I guess summer is the only time things are a little slower in our house. . . with that said, quick and easy dinners are a MUST this time of year! 
SO, I'm going to share with you a dinner that takes one minute to prepare. . . But can feed an entire family. . .
Just take a pork tenderloin, place it in the slow cooker, cover it with a can of cream of mushroom soup, cook on low for 8 hours. After 8 hours, whisk into the sauce half a block of cream cheese (4 oz) (which makes an incredible gravy) and that is it. . . you're done. . . You have an amazing pork tenderloin with creamy gravy that looks REALLY impressive but literally took all of 30 seconds to make! (I used low-fat cream of mushroom soup and low-fat cream cheese!)  I served the tenderloin with rice and a Strawberry Spinach Salad. Amazing! Erin Meadows shared this recipe with me (notice there are no measurements. . . yes, she is the kind of person who doesn't NEED measuring cups. . .) Other 'Erin' recipes on Elizabeth Ann's Recipe Box are the  5 Layer Greek Appetizer and La Bella Cucina Scones! She is a great cook and anytime she shares a recipe with me, I cannot make it fast enough!

  1. My crockpot is in storage right now until we move into the new house ... but this recipe will be a staple for us! I've made it before but never with the cream cheese added (love that idea). It's also nice to throw in a sprig of rosemary for a nice flavor! :)
