3 Lascaux Chicken Waldorf Salad

I made this quick and {surprisingly} yummy chicken salad last night!

When I put Nate's dinner of chicken salad in front of him (ON A TORTILLA. .. NOT a lettuce wrap), he looked at me like, "umm, this is rabbit food" . . . but once he tasted it, he thought the chicken salad was really good. . . in his words, "Surprisingly good!"
No, this isn't your "extra mayo" southern chicken salad but it is a chicken salad that even a steak and potatoes man would like! (and Nate rewarded himself with a piece of cake after dinner!)
Casey and I BOTH are blessed by all of your entries into the Casey Wiegand Art giveaway . My heart is full! :-) Have a lovely Tuesday morning!
