3 Lascaux Chicken Waldorf Salad

I made this quick and {surprisingly} yummy chicken salad last night!

When I put Nate's dinner of chicken salad in front of him (ON A TORTILLA. .. NOT a lettuce wrap), he looked at me like, "umm, this is rabbit food" . . . but once he tasted it, he thought the chicken salad was really good. . . in his words, "Surprisingly good!"
 No, this isn't your "extra mayo" southern chicken salad but it is a chicken salad that even a steak and potatoes man would like! (and Nate rewarded himself with a piece of cake after dinner!)

Lascaux Chicken Waldorf Salad
Adapted from Paleo Plan.com
* 2 cups of cooked diced chicken
* 1 large tart apple, cored and diced (I used granny smith, and I cored, peeled and diced!)
* 1 cup chopped celery
* ½ cup chopped walnuts
* 2 teaspoons lime juice
* 1 tablespoon honey
* 2 tsp olive oil
* Black pepper
1. In a medium size bowl, combine chicken, apple, celery and walnuts.
2. In a small bowl, combine lime juice, honey, and olive oil and mix until well blended.
3. Season to taste with pepper.
4. Spoon dressing over chicken salad and toss to cover chicken.
5. Enjoy!
