4 Paleo Pulled Pork

Have you ever heard of Crossfit? I have been going for the past week and a half and am LOVING it! Many people who do Crossfit follow the Paleo diet . . .The idea is that you basically eat like a caveman. . . meat, nuts, vegetables, fruit, etc. 
So in honor of my first week of Crossfit, here is a very easy "Paleo" meal! :-)

The pork loin after cooking in the slow cooker all day!
Shredded. . .
Nate REFUSED to eat his pulled pork on a lettuce leaf. . . so, a very UN-paleo tortilla was substituted!

INGREDIENTS
2lb pork loin
1/2 tsp fresh sage
2 tsp fresh thyme
1 tsp ground mustard
2 tsp smoked paprika (I used regular paprika)
1/2 tsp ground cumin`
1 tbsp fresh rosemary, chopped
½ tsp ground black pepper
1/3 cup olive oil

DIRECTIONS:
Mix all ingredients together in a bowl. Add pork and coat evenly massaging into pork. Cover and refrigerate for at least 3-6 hrs.

Slow cooker: place in slow cooker on high for 3hrs then low for 2.hrs (I just cooked on low for 8 hours)
Oven: Preheat oven to 375°F.
Place pork in an oven proof dish with ½ cup of water. Cover and cook for 2 hours or until meat falls apart.

THEN…once cooked
Use 2 forks to shred the pork apart. Mix the shredded meat into the liquid.
Remain hot till ready to eat. Use lettuce leaves to serve the pulled pork. recommended: boston lettuce leaves.

  1. i SO love pulled pork and am totally trying this this week! :) except I might have to be like nate and have it on a tortilla! :) ive been thinking about checking out that way of eating as well! :)

  3. hi there Elizabeth Ann--I stumbled on your site via faith blogs & noticed the word "paleo," which led me to wonder, "does she do crossfit?" Sure enough. So do I. I also love time in the kitchen & our family eats in paleo fashion. Glad to have found you.

  4. Oh & can I recommend eating it atop coleslaw instead with paleo mayonnaise? Maybe Nate would eat it then?!
