9 Freezer Meal: Cilantro Lime Chicken

The past few weeks, I have been concentrating on making quite a few freezer meals. If I make a pot of soup, we eat half of it and then freeze the other half.
This is a great way to prepare for the busy days to come once school starts again!
This Cilantro Lime Chicken is so easy and only takes about 5-10 minutes to prepare!
Cilantro Lime Chicken
1 1/2 pounds of chicken breast
Juice from 2 limes
1 bunch fresh cilantro, chopped
1 (16 oz) bag of frozen corn
2 minced garlic cloves
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin
salt and pepper to taste
Place all ingredients in a resealable gallon sized freezer bag. Mix together and zip bag closed. When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours or HIGH for 4 hours in a slow cooker. Serve with tortillas and your favorite toppings (guacamole, sour cream, salsa, cheese, etc)

  4. That sounds delicious and diet wise! (I need to lose a few (!) pounds, so that's a good thing.)
Question: Does it have to go to the freezer or can it go straight into the slow cooker?

    1. You can just put it straight in the crock pot if you choose! :-)

  5. This recipe looks yummy. My family loves anything with a Mexican theme to it!

  8. Yum! I definitely want to try this. I have been trying to use the slow cooker more and it's such a time saver. I hope your new year is off to a great start!
