1 Salmon and Cucumber Bites

When thinking of ideas for the homegrown cucumbers our friends gave us, I remembered seeing these salmon bites at different parties over the years. 
So I made these cute appetizers for friends coming over on Tuesday night and then again for my family last night! They were loved by all. . . and the best part is that they look incredibly fancy, but take all of 2 minutes to put together! :-)

Salmon and Cucumber Bites 
Cucumbers
Cream Cheese
Smoked Salmon
Dill
Peel and slice the cucumbers. Spread cream cheese on top of the cucumber and had salmon and a sprig of dill! :-)

3 Cucumber Bites with Garlic Herb Filling

Some friends of ours have a pretty amazing vegetable garden and were kind enough to give us quite a few homegrown cucumbers!
I have had my eye on these cucumber bites for a while and immediately knew this was the perfect recipe for the beautiful cucumbers! 
The cucumber bites turned out prettier and tasted more amazing than I had even imagined!
I served them to a room full of girls last night and, needless to say, they were quickly devoured! :-)

1 Chili Lime Buttered Corn on the Cob

Nate and I loved having an extra long weekend spent with friends and family! :-) 
On Memorial Day, we stopped at a farmers market and picked up a couple of things for dinner. . .

 including sweet corn!
I have had my eye on this Chili Lime Buttered Corn on the Cob recipe for a while now and Memorial Day seemed like the perfect reason to try it out! :-)  
The recipe did not disappoint and is a great side for barbecues, pool parties, or any outdoor entertaining!

Chili Lime Buttered Corn on the Cob
6 ears of sweet corn 
1/2 cup (1 stick) of unsalted butter, softened
1 tsp lime zest
2 tsp lime juice
1 tsp chili powder
1/4 tsp salt
pinch of pepper
Stir ingredients together. Spread chili lime butter over all sides of corn. Wrap corn individually in a piece of foil and place on grill for 15 - 20 minutes!

2 Berry Patriotic Cupcakes

Happy Memorial Day! :-) 
Words cannot truly express the thankfulness I have for the service men and women and their families. . . who sacrifice so much. 
Praying for the safety of our troops and peace for their families today. 
As Nate ends most of his prayers, "Keep our boys safe and bring them home, Lord."

Berry Patriotic Cupcakes
12 cupcakes
1-1/2 cups COOL WHIP Whipped Topping
12 small strawberries 
1/4 cup blueberries 

1.Spread cupcakes evenly with whipped topping.
2.Arrange 5 of the strawberry slices on top of each cupcake to form a star.
3.Fill center of stars evenly with blueberries. Store in refrigerator

0 Lemon Dill Cream Cheese

This spread contains some of my favorite ingredients: cream cheese, lemon and dill! 
And the best part about it is that it literally takes 1 minute to prepare! 
A light and lovely appetizer for any get together!

Lemon Dill Cream Cheese
8 ounces cream cheese
1/2 lemon, juiced
1 lemon, zested
2 tablespoons fresh dill, minced
Mix together cream cheese ,lemon zest and juice and minced dill. Refrigerate until ready to use.
Serve on toasted bagels with smoked salmon or on crackers as an appetizer.
Makes 8 ounces.

3 Chex Lemon Buddies

This is the perfect summer snack!
Think puppy chow but instead of peanut butter, a summery lemon flavor! :-)

Chex Lemon Buddies
makes 24 - 1/2 c. servings
9 c. Rice Chex cereal
1 1/4 c. white chocolate chips or white baking chocolate
1/4 c. butter or margarine
4 tsp. grated lemon peel
2 Tbsp fresh lemon juice
2 c. powdered sugar
Into a large bowl, measure the cereal and set aside.
Place white chocolate chips, butter, lemon peel, and lemon juice into a microwave-safe bowl and heat in the microwave on high for 1 minute. Stir, then heat again for about 30 more seconds or until the mixture is smooth when stirred. Pour the mixture over the cereal, stirring till evenly coated. Pour into a 2-gallon resealable food storage plastic bag.
Add powdered sugar. Seal the bag and gently shake until well coated. Spread on wax paper or foil to cool. Store in an airtight container.
